Ingredients
6 servings
2 cupsbrown beans
or black eyed peas, Peeled, soaked for 2 hours
2red bell pepper

2fresh pepper
scotch bonnet pepper
1.5onion

2 Cupcrayfish
4 Cupwater
for blending
2 tablespoonspalm oil
2 cupvegetable oil
or oil of choice
1seasoning cube
maggi crayfish
1 teaspoonsalt
1 teaspoonchicken seasoning
1 teaspoonchilli oil
for extra heat
3eggs
boiled, halved
Instructions
Step 1
Soak and wash beans to remove the shaft completely
Step 2
boil eggs,peel and set aside to cool
Step 3
blend peppers and onions until smooth
Step 4
Add palm oil and vegetable oil in a large frying pan on medium heat
Step 5
add chopped onions and fry for about two to three minutes
Step 6
add crayfish and mix
Step 7
add blended pepper mix, add seasoning and salt then fry for about 5 minutes
Step 8
in a blender add washed beans and pepper sauce
Step 9
add water, salt, chicken seasoning chili oil and blend until completely smooth
Step 10
pour batter into ramekins or baking cups and top with halved eggs
Step 11
If baking in an oven: cook in a deep baking dish filled halfway to the ramekins with hot water for 40 minutes at 175⁰C
Step 12
Or steam over the fire in a large pot with water halfway , cover and steam for 35 minutes
Step 13
To test if done insert a wooden skewer in the middle, if it comes out clean it's done
Step 14
Serve hot
