Step 1
Place a sieve over a large howl then put a cheesecloth inside and pour in the kefir to strain the whey out . Cover and let it sit for one hour . Keep the whey for pancakes oft smoothies as its rich in probiotics

Step 2
Grate a large cucumber over a tea towel then squeeze out all the liquid .

In a large bowl add strained kefir grated cucumber 3 cloves crushed garlic fresh squeezed lemon juice chopped dill and mint white wine vinegar olive oil and salt and pepper to taste . Mix it all to combine . You can eat it now but it tastes better after about an hour in the fridge
