Instructions
Step 1
• cut the apples into very small cubes, set aside
• preheat your oven to 175 - 190 C. Depends if your oven runs cold or hot.
Step 2
• whisk sugars and eggs for about 1-2 minutes.
• add the oil and whisk until combined, then the lemon juice and whisk again.
Step 3
• add the flour, cinnamon, baking soda and salt and whisk until the batter becomes smooth, watch out to not overmix
• add the cuped apples and fold
Step 4
• put the cake batter in the baking pan (26 cm) and bake for about 45 - 50 minutes. Use a toothpick to check if the cake is done. (toothpick comes clean out)
Step 5
• let the cake cool completely. Once it is cool, slice it into two parts and set aside.
Step 6
-> please be carefull, because of the apple pieces the cake is very fragile. After slicing the cake in two, make sure to lift up the top layer with either two larges knives or spatulas.
For the whipped cream
Step 7
• whisk the cream cheese for about a minute.
Step 8
• add heavy cream, powdered sugar and the vanilla and whisk again.
Step 9
• using a spatula fill the cake with the whipped cream
Step 10
• add the top part of the cake and the remaining whipped cream on top of the cake
Step 11
• finally, decorate the cake according to your ideas
