Instructions

Step 1
Preheat the oven to 400. Line a sheet pan with parchment paper and set aside.

Add the kale to a large bowl, add the olive oil and massage the oil into the kale using your hands. Add the salt, oregano, pepper, lemon zest and parmesan. Toss to coat. Add the kale to a baking sheet without parchment paper, spread out and bake for 14-17 minutes, tossing after 8 minutes. When finished, increase temperature to 425.
Step 3
While the kale is roasting, make the mustard mix and the mash. In a small bowl, add the mustard, honey, garlic, lemon juice, salt and pepper and mix to combine. Set aside. In a larger bowl, add the avocado, feta, parsley, capers, lemon juice, salt and pepper. Gently mash and set aside.
Step 4
Add the salmon to the sheet pan with parchment paper, pat dry, then season with salt and pepper. Add the honey mustard mix to the top, then brush it all over. Top the salmon with the onion granules, then roast it for 8 minutes. Last, place the salmon 6 inches from the broiler for 2-3 minutes.
Step 5
Top the salmon with the mash, crispy kale, parsley, red onion, feta and honey if using.
