Instructions

Step 1
‘Bhuna’ in hindi means roasted. So the key to this recipe is thorough roasting on medium heat without letting the spices burn.
Step 2
Heat the ghee in a thick bottomed pan and add bay leaves, green cardamoms and cumin seeds. Once fragrant, add the minced onions and sauté for a couple of minutes. Add sugar to caramelize the onions and sauté further until they turn golden brown.
Step 3
Add the green chilis, garlic and red chilis and roast for another 3-4 mins without letting them burn.
Step 4
Now add salt and all powdered spices except for garam masala and dried fenugreek. Also add minced green peppers and 1.5 tbsp cilantro leaves. Mix well, add about 2-3 tbsp of water and cook for 5-6 mins.
Step 5
Add the tomato paste and purée and cook until the masala is nice and thick. Now add about 2 cups water and cover and cook on medium heat for 4-5 mins.
Step 6
Mix in the grated and cubed paneer, garam masala, dried fenugreek along with some water (adjust quantity as per desired thickness). Cover and cook for another 4-5 mins.
Step 7
Turn off heat. Garnish with remaining cilantro leaves and serve with rotis or basmati rice!
