Roast the broccoli

Cook the pasta with salt according to directions on the package; drain. Remove the pot from the heat and add the pasta back to the pot with olive oil.

Heat a frying pan over medium-high heat. Spray with cooking spray and add the chopped bacon. Cook until crispy, then remove from pan. Turn the heat down to medium/low. Add the onions and garlic; sauté until tender. Add the almond milk and cheese wedges; stir until cheese is completely melted.
Step 4
Add the cheese mixture, bacon and broccoli to the pasta. Stir until well combined. Stir in the shredded mozzarella and Parmesan cheeses. Weigh the entire recipe and divide the weight by the number of servings. Enjoy warm. Add salt and pepper as needed, to taste.
