Step 1
Preheat oven to 325*. Place chopped pistachios on a big plate. Beat the egg whites in a separate bowl and set aside.
Step 2
Season the chicken with salt and pepper and then gently dip them into the beaten egg whites. Gently toss them between your hands so any loose pistachios can fall away.
Step 3
Heat the oil and butter in an oven safe skillet over a medium heat. Gently place the chicken breasts into the skillet and fry 5-8 minutes, until the bottom coating is brown and crisp.
Step 4
Turn the chicken over in the skillet and place the skillet in the preheated oven. Bake for 30 minutes.
