Ingredients

2 tablespoonsvegetable oil
1 tablespoonlight brown sugar
2 teaspoonspaprika
2 tablespoonsgarlic powder
2 tablespoonsonion powder
1 teaspoonsalt
1 teaspoonpepper
½ teaspoonground cumin
3 poundsboneless pork roast
cut into 2" cubes
1 ¼ cupsbeef broth
divided
⅓ cupapple cider vinegar
2 cupsbarbecue sauce
divided

Instructions
Pulled Pork
Step 1
Heat vegetable oil
Pressure CookerSaute
Step 2
Mix brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cumin. Toss in pork cubes and coat.
Bowl
Step 3
Add pork to pressure cooker in a single layer. Allow pork to brown for 5 minutes, then flip and brown 5 more minutes.
Step 4
Remove pork and set aside then deglaze the pot with 1/4 cup beef broth, scraping the cooked bits off the bottom.
Step 5
Mix vinegar, 1 cup barbecue sauce, and remaining 1 cup beef broth.

Add pork back to pressure cooker and pour in broth mix. Cover and set to pressure cook for 40 minutes.
Step 7
Release naturally for 10 minutes then quick-release remaining pressure.
Step 8
Remove pork and place into a large dish. Shred pork. Mix the remaining 1 cup barbecue sauce. Set aside.
Macaroni & Cheese
Step 9
Over low heat, melt butter. Add in flour cook for 2 minutes, stirring continually. Raise heat to medium then add milk. Bring to a boil while continuing to stir. Once boiling, reduce heat to low and simmer for 4 minutes.
Sauce Pan

Add cheese and stir until melted and well combined. Pour in cooked pasta until coated. Season with salt and pepper.
Step 11
Spoon Macaroni and Cheese onto serving plates and top with Pulled Pork.
