🍲Creamy Chicken & Wild Rice Soup 🍲
This soup is currently simmering in my crockpot and I promised on my Insta-story that I’d repost it, so here you go! I’m taking dinner to a friend who just had a baby and I’m hoping she likes this. 🤞🏼 I’m so glad Fall is here and soups are legit, accept it’s still hot here in AZ. (Currently 94° 😐) But we like to pretend it’s cool outside. 😜 p.s. You could easily make this
or
by leaving out the rice and the 2 cups of water.
Here's the recipe: -----------------------------
🍲Creamy Chicken & Wild Rice Soup 🍲
#
▫️1 cup TJ's sprouted rice blend (or other wild rice blend)
▫️1 pound chicken breasts (or tenderloin) #
▫️1 large onion, chopped #
▫️1 c celery, chopped #
▫️1 c carrots, chopped #
▫️4-5 garlic cloves, minced #
▫️2 Tbsp TJ's "21 Seasoning Salute" or other salt free poultry seasoning #
▫️3 bay leaves #
▫️6 cups chicken broth #
▫️2 cups water #
Put all ingredients in crockpot and cook for about 4 hours on high. Pull out chicken, shred and then set aside. Meanwhile, mix the next 3 ingredients in a small saucepan on low heat and stir constantly until thickened.------ ▫️2 Tbsp olive oil
▫️4 Tbsp arrowroot powder (or cornstarch)
▫️3 cups milk (of choice)
Pour this milk mixture into the crockpot along with shredded chicken. Stir altogether, adding 2 tsp salt (or more to taste) and 1 tsp pepper.
Oh ya, don't forget to pull out those bay leaves!! 🍃
