Ingredients

1 poundpork loin
optional: use chicken breast instead
1 tablespoonminced garlic
1 tablespoonorange juice
⅓ cuplime juice
3 teaspoonscumin
2 teaspoonssmoked paprika
salt
to taste
pepper
to taste
¼ cupgreen chiles
1can yellow sweet corn
2 tablespoonslime juice
½ tablespoonapple cider vinegar
2 tablespoonscilantro
chopped
⅓ cupred onion
finely chopped
⅓ cupcotija cheese
crumbled
½ teaspoonpaprika
salt
to taste
pepper
to taste
¾ cupCilantro-Lime Brown Rice
1 cupblack beans
4 cupsromaine
lime wedges
Instructions
Step 1
For the Carnitas:

Place pork loin and minced garlic into slow cooker and cook on high for 2–4 hours, or, for more tender pork, cook on low for 6–8 hours. Remove pork loin and shred with two forks. Place shredded pork into a large bowl and add in the rest of the carnitas ingredients and mix.

For the Street Corn:

Mix together corn thru salt/pepper in a medium-sized bowl.

To assemble bowls:

Place about 2 cups of romaine lettuce on the bottom of your bowl. Then add 1/4 of the meat (4 ounces), about 3/4 cups cilantro-lime brown rice, 1/2 cup street corn and 1/4 cup black beans. Serve with fresh lime and more cotija.
