Instructions
Step 1
In a large bowl mix the oats, pecans, cinnamon and salt. In a microwavable bowl, combine the coconut palm sugar and 1/2 cup of water. Heat until the sugar is melted. Stir in the oil and vanilla. Pour over the oats mixture and stir until well mixed.
Step 2
Divide the mixture evenly between two oiled baking sheets and bake for 15 minutes at 300 degrees. Stir the mixture and cook about another 10 -15 minutes until the oats are golden brown and the nuts look well toasted.
Step 3
Cool the oats on the baking sheets as they will continue to cook a bit and get a bit crispier.
