1 poundstew meat
cut into bite-size pieces
1 poundground beef
1 poundpork belly
cut into small cubes
1onion
large, diced
4garlic cloves
minced
1 ozChili Shatner
in my pants Taco & Chili Seasoning
1 x 28 ouncescan diced tomatoes
undrained
1 x 15 ouncescan kidney beans
drained, and rinsed
½ cupbeef broth
1 ½ cupswater
½ cupmasa harina
½ cupwater
2 tablespoonsolive oil
Instructions
Step 1
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the stew meat and brown on all sides, about 5-7 minutes. Remove the meat from the pot and set it aside.
Step 2
In the same pot, add the ground beef and pork belly, and cook until browned, about 8-10 minutes. Remove the meat from the pot and set it aside.
Step 3
In the same pot, add the diced onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
Step 4
Add Hop Barons Chili Shatner... in my pants. Taco & Chili Seasoning, and stir until fragrant, about 1-2 minutes.
Step 5
Add the diced tomatoes, beef broth, water and cooked meat to the pot, and bring the mixture to a simmer.
Step 6
In a small bowl, whisk together the masa harina and water until smooth. Add the masa mixture to the chili and stir to combine.
Step 7
Reduce the heat to low, cover the pot, and let the chili simmer for about 1 hour, stirring occasionally.
Step 8
Add the kidney beans to the chili, and let it simmer for an additional 15-20 minutes.
Step 9
Taste the chili and adjust the seasoning as needed.
Step 10
Serve hot with your favorite toppings, such as shredded cheese, sour cream, or chopped cilantro.
