1 BoxPulse Pasta
penne or red lentil
4Capsicums
1red onion
2 tablespoonsgarlic
80gCashews unsalted
1 cupalmond milk
or soy
35gsun dried tomato
1 tspchilli flakes
basil
Instructions
Step 1
Soak cashews and sundries tomato’s in water
Step 2
Cut capsicums into large chunks with onion and place on a baking tray with a drizzle of olive oil
Roast on 200 degrees fan forced for 20-30minutes until browning
Step 3
Add roasted veges, garlic, cashews, sun dried tomato, almond milk to a blender and blend till smooth
Step 4
Cook the pasta till done
Step 5
Heat the sauce in a saucepan with olive oil and add the cooked pasta, with a cup of pasta water
Step 6
Add the basil and pepper and stir till mixed
