Instructions

Step 1
Combine 1 Tbsp extra virgin olive oil with garlic, herbs, salt, pepper, tomatoes (and their juices), and beans in a small bowl. Set aside (note: the longer you leave this, the better the flavours will combine... I'll sometimes make the night before and leave in the fridge ).
Step 2
Heat a quick swish of olive oil in a pan over a medium heat. Pat the fish dry, season with salt and pepper, and pan-fry on each side for about 4 minutes until golden brown. Remove from the pan and set aside.
Step 3
Add the tomato and bean mixture to the skillet and add the extra olive oil. Bring to a low simmer - the sauce should start to thicken. Add the broth as needed to thin it. Season to taste. When the sauce is velvety and loose enough to evenly coat the back of a spoon, add the fish back in.
Step 4
Spoon the sauce over the top of the fish, sprinkle with parmesan and pine nuts.
Step 5
Serve with sides of choice, and enjoy! :)
