Instructions
Step 1
Get the fish ready:
To guarantee a crispy sear, use a paper towel to pat the dourada fillets dry.
Add a large amount of salt and black pepper to both sides.
Step 2
Heat the Pan:
Add the olive oil to a non-stick frying pan set over medium-high heat.
Carefully drop the fillets in the pan, skin-side down, once the oil is hot.
Step 3
Sear the fish:
For 4–5 minutes on the skin side, or until it is crispy and brown.
Using tongs or a fish spatula, turn the fillets over and cook for a further three to four minutes.
Step 4
Make the Lemon Herb Butter:
By combining the melted butter, parsley, dill, lemon zest, lemon juice, minced garlic, and chilli flakes (if using) in a small bowl.
Step 5
To finish the dish:
Add the herb butter to the pan and lower the heat to low.
To infuse the flavours, spoon the melted butter over the fillets for one to two minutes.
Step 6
To serve:
Move the fillets to a platter and cover them with the leftover pan sauce.
For presentation, add a slice of lemon and additional herbs as garnish.
