Instructions
Step 1
Brown the salmon on either side in a deep pan for 1-2 minutes until coloured. Remove and set to one side.
Step 2
Add the leek, shallots, and a pinch of salt in the same pan to sweat down for 3 minutes. Then add in the sliced courgettes and garlic and sweat for another 5 minutes.
Step 3
Sprinkle in 1 tbsp flour and mix, add in the drained beans and pour enough water in to nearly submerge them but not quite. Add the chicken stock cube and a crack of pepper and allow to simmer to slightly thicken on a gentle heat for 5 more minutes.
Step 4
Mix then add in the zest of 1 lemon, the juice of 1/4 lemon, 30g grated parmesan and 2 tbsp creme fraiche. Taste and season if needed before adding back in the salmon fillets and allow to gently simmer for 3 minutes until the salmon is cooked.
Step 5
Serve and finish with a scattering of fresh parsley, some extra lemon zest and parmesan if needed.
