Instructions

Step 1
Parboil all the meat and bones for 15 Minutes. This means to boil it then dump out the water and wash the meat and bones.
Step 2
Once the meat is clean. Saute lots of oil with chopped garlic, lots of Cayenne, Paprika, Onion Power, and Garlic Powder for a couple of minutes. Put meats in main pot and fill with water 2 inches over everything. Boil.
Step 3
Char Garlic, Onion, Shallots, and Ginger. You want to char it in the oven or over an open flame. Throw in the boiling pot.
Step 4
Add Lemon Grass. Like a bundle of it. Make sure you smash the lemon grass before you add it.
Step 5
Once boiled, add salt and chicken bouillon to taste.
Step 6
While the broth cooks. Make the Sate. Cook annatto seed with oil until red, take out the seeds, then add lemongrass, shallots, garlic, and lots of chili peppers to make it spicy.
Step 7
Let it boil for 2 hours and take out only the pork hocks.
Step 8
Let it boil for another hour and do a taste test. Add additional fish, some shrimp paste, Sugar, and the Sate oil you made earlier to taste.
Step 9
Take out the shank and brisket. Let cool and slice them up.
Step 10
Done! Add to noodles and garnish however.
