Sunny Lemon Summer Squash
Ingredients:
Yellow summer squash
Lemon
Butter
Olive oil
1-3 garlic cloves (depends on your preference)
Lemon Thyme
Salt
Walnuts (optional)
In a skillet heat olive oil and 2 tbsp of butter. Add chopped garlic and let cook for 1-2 min. Add chunks of summer squash and sprinkle with salt. When squash is half cooked add several sprigs from lemon thyme. When squash is softened remove from heat. Add zest of lemon and then squeeze juice from half of lemon into pan. Serve with walnuts raw or toasted.
