Instructions
Step 1
Fry off curry paste in a little olive oil to release the flavours (approx 1-2 mins) Add chicken and brown off.
Step 2
Add carrots and beans
Step 3
Add chicken stock, Kaffir Lime leaves, lime juice, fish sauce, soy sauce, sugar.
Step 4
Simmer on low for approx 30-45 mins, stirring occasionally.
Step 5
After simmering add coconut cream . Stir to combine.
Step 6
Simmer for another 5 mins or so.
Step 7
Taste and adjust flavour accordingly (sometimes needs more lime juice).
Step 8
Once cooked, take off heat, cover and let sit on the hot plate for another 10 mins (to develop flavour). The longer you leave it the better.
Step 9
Don’t forget to discard lime leaves when serving.
