If you can tolerate dairy, try some crumbled goat or feta cheese with this salad, and it'll be even more fantastic. Either way, it's stunning as a holiday centerpiece with the bright red, green, and orange medley.

Instructions

Step 1
Preheat the oven to 350 degrees F.
Step 2
In a large bowl, toss the chopped sweet potatoes with the olive oil, coriander seeds, fennel seeds, cinnamon, and 1 1/2 teaspoons of the salt, coating the chunks evenly. Spread the potatoes in a baking dish and roast them until they are fork-tender, about 25 to 30 minutes. Remove them from the oven.
Step 3
In a large serving bowl, toss the still-warm sweet potatoes with the chopped spinach, using the heat of the sweet potatoes to lightly wilt the spinach. Once the potatoes cool, stir in the walnuts and dried fruit along with a sprinkle of salt and goat or feta cheese, if you're using it, then serve. (Vegan-Omit cheese).
