Ingredients

0.75 poundcauliflower
bite-size, medium
2 tablespoonsextra virgin olive oil
¾ cupred onion
julienne slices
2 teaspoonsdried tarragon
¾ cupwalnuts
california, coarsely broken
4 ozwhole grain pasta
3 tablespoonslemon juice
3 tablespoonsdrained capers
¾ teaspoongarlic salt
freshly ground pepper
2 cupsbaby arugula
lightly packed
2 x 4.5 ozcans yellowfin tuna in extra virgin olive oil
selects, solid
3 tablespoonsgrated parmesan cheese
Instructions
Step 1
Preheat oven to 450°F.
Step 2
Toss cauliflower with olive oil and place on a foil- lined baking sheet; roast for 10 minutes.
Step 3
Stir in onion and tarragon and roast for 5 minutes more.
Step 4
Stir in walnuts and roast for 5 minutes more or until cauliflower is lightly browned and walnuts are toasted.
Step 5
While vegetables are roasting, cook pasta according to package directions. Drain well, then place back in pan. Stir in lemon juice, capers, garlic salt and pepper. Add arugula and tuna and toss lightly to mix.
Step 6
Transfer to 6 bowls and sprinkle with Parmesan.
