Step 1
Boil the pasta in the pan you will use after.
Step 2
When it's 80% ready transfer the pasta with the water in a heatproof bowl.
Step 3
In the same pan from before add a tablespoon of oil and add the garlic.
Step 4
Mix the spices(+sugar) and add them to the pan with the garlic. Immediately after that add the tomatoes and reduce.
Step 5
After reducing it to 50% it the original volume add the pasta with a little bit of the pasta water and mix.
Step 6
Add the butter and mix it. After that add a generous amount of parmigianino and mix. Keep adding until your heart or wallet tell you to stop.
Step 7
