1 cupbrown rice
dry

1yellow onion

4garlic cloves

2 Tbspcumin
ground

½ Tbspchili powder

2 tsppaprika powder

2 tspsalt

2 tspblack pepper
ground

440gmixed beans
drained

800gtomatoes
crushed

1 cupwater

8 Tbspfrozen corn kernels

1fresh lime

Instructions
Step 1
Start by cooking the rice according to the package
Step 2
Meanwhile, chop the onion and mince the garlic, then add to a pan on medium heat and sauté until the onion is soft
Step 3
Add all of the spices (be careful with the chili if you don't like it spicy) and a splash of water if needed and let it cook into a paste
Step 4
Now add the drained beans, crushed tomatoes, corn kernels, water, and cover with a lid and let simmer on medium heat for 15 minutes stirring occasionally.
Step 5
When the chili is done, serve in a bowl with rice and top with coriander and lime!
