Instructions

Step 1
Cook rice according to packaging and set a side.
Step 2
In a medium frying pan, heat 15 ml of oil and gently fry off the red onions, garlic, black beans, Cumin, mixed herbs and salt. Stir frequently and cook until all liquid has dried out for around 5 minutes.
Step 3
Remove 50% of the black bean mixture from the pan and place into a small bowl. Mash the mixture with a fork until the black beans mixture starts to form a chunky paste.
Step 4
Place one wrap on a large plate, spoon a few spoons of cooked rice in the centre of the wrap. Add half of the crushed avocado, red peppers, crushed black beans and the whole black bean mix.
Step 5
Sprinkle spring onions and parsley on top and wrap.
Step 6
Heat a nonstick pan on low heat, then place the burrito into a pan and lightly brown on both sides for 2-3 minutes. low heat. .
Step 7
Cut and serve with mixed salad.
