2 eggs
½ cup dairy free creamer or milk
¼ cup lemon juice
1 ½ tsp baking powder
¼ tsp salt
1 1/2 cup blueberries
Topping:
1/2 cup powdered sugar (or more if needed)
1 tbsp lemon juice (or more if needed)
Combine all ingredients for the pancakes (except blueberries and baking powder), then combine until there are still some chunks of flour, add blueberries and baking powder, then stir until just combined. Line a 8” baking dish with parchment paper. Pour batter into the pan and bake on 350F for 20 minutes. Once cooked, remove from oven. Stir together powdered sugar and lemon juice and spread it on top. Slice and serve!
