Instructions

Step 1
In a bowl combine egg yolk milk, yogurt and vanilla
Step 2
Add in the flour, stevia and baking powder
Step 3
Beat up the egg white with a pinch off salt until stiff peaks
Step 4
Combine the egg white with the rest of the batter and add in the blueberries (I recommend coating them in a little bit of flour so they won't fall apart)
Step 5
Put baking paper into the ramekins and pour in the batter
Step 6
Bake at for 30-40 minutes or until the toothpick comes out clean (they are big so they need to bake for a little bit more then normal sized muffins)
Step 7
When out of the oven (they will be beautiful golden brown at the top) let them cool down a bit before enjoying
