Crispy Roasted Parmesan Carrots with Creamy Spicy Honey Mustard

Instructions

Step 1
Preheat the oven to 425. While the oven preheats, add the butter to a casserole dish and place in the oven to melt.
Step 2
Make the parmesan mixture. Add the Parmesan cheese, salt, oregano, garlic powder and pepper to a small bowl. Mix to combine. Set aside.
Step 3
Remove the dish from the oven, add the parmesan mixture to the dish, mix to form a paste with the butter and spread evenly. Place the carrots face down over the mixture. Drizzle the tops with olive oil and place in the oven for 25-30 minutes, until carrots are tender.
Step 4
While the carrots are roasting, make the honey mustard dip. Add the Greek yogurt, honey mustard and hot sauce to a small bowl. Mix to combine and set aside.
Step 5
Remove the carrots from the oven, allow to set for a few minutes, then use a spatula to remove carrots from the dish and onto a plate. Top with fresh parsley and serve with the dip.
