Delicious, simple, and mades a great sweet side dish

These were okay. It's probably not a go-to recipe for me, but my family also isn't the biggest fan of cooked carrots. I did boil thr carrots for a few minutes first.

I put a thumbs-down but I didn't dislike it, it just wasn't to my taste. The flavors weren't punchy enough, and the glaze didn't thicken the way I'd wanted. Also, in my opinion the directions don't cook long enough. I had baby carrots, halved, at 425* for 15min and they were still pretty firm. I reduced it to 350* for another 15-20min; that got them a lot more tender, and also encouraged more caramelization.

Hard as a rock with flavors that didn't integrate into the carrots.

Take it easy with the ginger. I had fresh ginger that I grated and it nearly overpowered the dish both in flavor and scent.

Was a big hit. Air roasted them for 20 min. Delicious

Will do it again boiling the carrots first because they were too hard but loved this recipe. It’s so easy to do!!
