In a skillet over high heat add olive oil and chicken breast. Sauté until no longer pink then add the bell pepper, jalapeño and onion. Sauté for two minutes. Add crushed garlic sauté for an additional one minute. Seasoning and mix well. Gently stir in black beans and corn. Finish with lime juice and cut the heat. Spray a sheet pan with nonstick spray and line the whole pan with flour tortillas overlapping the edge. Top with 1 1/2 cups shredded cheese then the chicken filling. Top chicken with the remaining cheese and 3 additional tortillas in the center if needed. Close it up. Place another sheet pan on top to hold it down and place a heavy oven proof pan on top to hold it in place and press it down. Bake at 350° for 40 to 45 minutes till golden brown and crisp then slice and enjoy!
