Instructions
Step 1
1. Preheat oven to 350° Fahrenheit. Line a baking sheet with parchment paper.

2. In a mixing bowl, combine the oats, almonds, coconut, and cinnamon. Mix well. Pour in the maple syrup, coconut oil and vanilla extract and mix well.

3. Pour the mixture onto your baking sheet and spread evenly.
Step 4
4. Bake for 15 minutes. Toss lightly with a spatula then bake a further 10 minutes until lightly golden.
Step 5
5. Serve with milk/yogurt and toppings of your choice.

6. Store cooled muesli in an airtight container or freeze in a zipper bag with the air squeezed out (no defrosting time required).
Step 7
Topping ideas: chocolate chips, fresh/dried fruits, seeds or nuts.
