Instructions

Step 1
Cook pork roast with 1/2 sliced onion, 2 garlic cloves, and salt to taste. Cook either in pressure cooker (takes 1 hour), or crock pot (takes 4-5 hours), until meat is soft and shreddable. Use enough water to cover roast. When done, remove from broth and set broth aside to make dough. Remove onions and garlic from broth and discard. Shred meat and discard any fat.
Step 2
To make red chili sauce, soak chilies in boiling water until soft. Liquefy in blender with 1 garlic clove, 1/2 tsp cumin, 1/2 tsp oregano, and salt to taste. Strain and add to prepared meat. Simmer for 20 minutes to blend flavors.
Step 3
Beat lard with mixer until it is foamy. Add salt and baking powder and continue to mix. Add flour and continue to mix.
Step 4
Begin adding broth, mix continually, add broth only until dough is soft and pliable.
Step 5
Soak husks in hot water. Put about 2 tbsp of dough on husk. Pat out flat, put 1 tbsp filling in center, roll and fold to form tamale. Continue until all dough is used. Cook in steam, tightly covered, for 1 hour.
