Instructions
Step 1
Bring a pot of water to the boil. Cook the pasta for 10-12 minutes or as per packet instructions. Once cooked, drain and set aside to cool.
Step 2
Meanwhile, for the dressing, mix two tablespoons of olive oil, lemon juice, balsamic vinegar and salt together in a small bowl.

3 Place the tomatoes and onion in a large bowl and pour over the dressing.

4 Coat the chicken in the smoked paprika, garlic powder and chilli powder.

5 Heat some oil on a non-stick pan, add the chicken and fry on a medium heat for 5-7 minutes on either side until cooked through and slightly browned

6 Add the red pepper and beetroot to the bowl with the tomatoes and onions

7 When the chicken has cooked, add to the bowl of vegetables with the pasta and mixed leaves, and toss to fully coat in the dressing before serving
