1) Sauté raw chicken and onion in butter. (If using roasted or canned chicken, sauté onion in butter and add chicken later.)
2) In a crockpot, add cooked chicken/onions, beans, broth, chilles, jalapenos, seasonings, cream of chicken soup, and corn. Stir.
3) Cook on LOW for 6-8 hours, or HIGH for 3-4 hours.
4) About 30 minutes prior to serving, add heavy cream and sour cream. Stir and cover.
5) When serving, garnish with shredded Monterey Jack cheese TIPS:
-Don't add Monterey Jack to soup and reheat because it tends to get stringy.
-For crockpot version, adding heavy cream/sour cream too early may cause these to curdle
-May serve as a hot dip with tortilla chips (Scoops).
