1 x 28 ozhominy
can, drained
1 x 28 ozcan diced tomatoes with green chiles
5red potatoes
medium, or Yukon, diced
1yellow onion
large, diced
2 cupscarrots
chopped
2celery stalks
chopped
2 Tbsground cumin
1 Tbsseasoned salt
1 Tbschili powder
1bay leaf
4bouillon cubes
veggie low-sodium
5 cupswater
salt
pepper

Instructions
Step 1
Combine hominy, diced tomatoes, potatoes, onion, carrots, celery, garlic, cilantro, cumin, season salt, chili powder, bay leaf, vegetable bullion, and water in a slow cooker; mix well.
Step 2
cover and cook on low for 6-8 hours.
Step 3
Remove bay leaf. Season with salt and pepper.
