Lomi Lomi Salmon Salad

"Lomi lomi" is a term for “massage therapist” or “Hawaiian massage.” In Hawaiian, the word lomi is traditionally used to describe an action of kneading, rubbing, or soothing, just like happy cats do. For ages, Hawaiians have been preparing fresh fish salads by mixing diced ingredients — fish, sweet Maui onions, tomatoes, and salt — and gently massaging them with hands, letting fish get cured by salt and vegetable juices.
In 19 century, the Hawaiian Islands were reached by the first fishing boats from the North-West of the Pacific ocean. They introduced salted salmon, and since then, lomi lomi salad has been made with cured fish.
There are no strict rules or proportions for this recipe. Add more fish or more tomatoes. You can substitute salmon with tuna and trout. Give this salad a couple of hours in a refrigerator to let all the flavors combine. Lomi lomi is served cold, sometimes with finely crushed ice mixed in.

Step 1
Peel and dice red onion. Place in a mixing bowl. (If you don't like an onion bite, add 1 tbsp kosher salt and 1 tsp key lime or lime juice, mix, let the salt draw juices, wash onions under cold running water in a strainer, strain, place in a mixing bowl.)
Step 2
Wash and dice tomatoes. Add to the onions.
Step 3
Dice salmon and chives, add onions and tomatoes. Gently mix all ingredients with a big spoon for about 2-3 minutes. Cover and refrigerate for 2 hours. Serve cold.
