Instructions

Step 1
1 Chops the chicken, wash and rinse to remove bone fragments. I'm only using 1 whole chicken and substitute the other with 2-3 lbs of wings.
Step 2
2 Marinate chicken with garlic, shallots, lemongrass, curry powder, fish sauce, ground pepper and msg for 3-4 hrs. Or overnight.
Step 3
3 Pan fry yam and taro with cooking oil until golden. This will help it from falling apart when simmering.

4 In a pot add 1 tablespoon cooking oil and marinated chicken. Stir while cooking for 7-10 minutes.

5 Add water, stir, cover and bring to a boil.
Step 6
6 Uncovered and scoop out all the scum on top.
Step 7
7 Add lemongrass stick, salt, chicken powder/bouillon, and sugar. Let chicken continue to simmer for 15 minutes.

8 Add yam and taro. Continue to let it simmer for another 15 minutes or until yam and taro are tender.

Taste and adjust

9 Add coconut milk, bring back to a low boil and let it simmer for 2-3 minutes. Do not cook the coconut milk for too long. It will lose it richness. Taste and adjust once more.
Step 11
‘If not serves right away. Removes the yam and taro to the side. This will help the yam and taro from being overcooked and fall apart inside the pot. Making the broth too thick.
Step 12
