Mushroom and Pancetta tomato pasta

Instructions

Step 1
Heat the Pancetta in a pan until the fat renders.
Step 2
Cook the pasta according to pack instructions, and reserve the cooking liquid.
Step 3
Add the mushrooms to the pan and stir for 1 min
Step 4
Add the pesto, tomatoes, tomato puree, herbs, garlic, sugar and a ladle or 2 of the pasta water and stir for 2-3 mins
Step 5
Add the peas and stir for another 1 min
Step 6
Stir in the pasta for 1-2 mins
Step 7
Serve. Garnish with some grated cheese
