3 packscelery
roughly chopped, Leafy bits too, NOT the core

6 poundsyellow onions
peeled and roughly diced

45 ozbutter

⅛ cupsalt

⅛ cuppepper

⅛ cuppoultry seasoning
keep container handy to adjust for your taste

or stock, vegetable standard, but can use any flavor depending on what meat you are serving, Thanksgiving i use turkey as an example

Instructions
Step 1
Put all butter in cooking pot on medium high heat. Add all diced onions and chopped celery.
Step 2

Once onions start to go limp, add salt, pepper and poultry seasoning
Step 3

Stir and cook until soft and opaque. Remove from heat and let cool completely
Step 4

Rip all bread apart into pieces. You can cut it if you want. Up to you. Place in your mixing container and set aside.

Preheat oven to 400°

Step 6

When onion mixture is completely cool, scramble all your eggs and dump ALL cooled onion mix and eggs over bread chunks and mix well

Add broth or stock one box at a time while continously mixing. You want a loose wet mixture but not a soupy mess. This part is depending on many variables and is not an exact science

Once mixture has reached the wetness you like (think custardy bread pudding) assess your size and heavily grease your baking dish or dishes.

Put in baking dishes allowing a little room for expansion. You can also make in a muffin tin for pre portioned servings

Cover with foil and Cook for 1 hour. Insert a knife in center to make sure its not raw. Your going for a souffle-like spongey texture, not mushy. When cooked thru remove foil and return to oven for 15 minutes to brown.
