Instructions
Step 1
Peel, dice, and boil potatoes and carrots. (It takes about 3 larger potatoes, which can boil in a medium-sized saucepan.)
Step 2
Preheat oven to 350°. Press bottom crusts into pie plates; do not flute yet!
Step 3
Mix all ingredients well, using a large mixing bowl. Press into pie crusts, dividing equally.
Step 4
Cover with second crust, fluting edges. Be sure to vent the center.
Step 5
To Bake: Shield crust. Bake at 350° for 35 minutes. Uncover crust, then bake an additional 10-15 minutes, until crust is golden brown on top. Allow to cool 10 minutes before cutting.
Step 6
To Freeze: Cover with plastic wrap, then aluminum foil. Store in freezer to share, or eat later. Defrost in fridge overnight, before baking.
