Instructions

Step 1
Chop chicken sausage and saute with potatoes, peppers, onions and spinach. Once veggies are tender and sausage is browned, add eggs, egg whites and seasonings
Step 2
Fill tortillas evenly with 1/4 of the egg mixture then top each with 2 Tbsp cheese. Roll tortilla up tight and enjoy warm dipped in salsa.
Step 3
Store extras in the fridge wrapped in foil until ready to eat. To reheat, place in the oven at 400 degrees for 20 minutes.
