Zalabia Fritters in Orange Blossom Syrup

Zalabia Zalabia is a fritter donuts-like, found in several cuisines across Europe, the Middle East and West Asia. Here is the Lebanese version of Zalabia is made semi-thin batter of wheat flour which is deep fried into hot oil and dipped in Orange Blossom Water Syrup or dusted with powdered sugar. Require only 5 simple ingredients that you already have in your pantry.

Instructions

Step 1
Stir the instant yeast and 1 teaspoon sugar in ¼ cup lukewarm water; leave the mixture until it foams.
Step 2
In a mixing bowl, combine all-purpose flour and corn starch and the yeast mixture, gradually stir in water, beating vigorously until smooth and elastic, about 10 minutes. Cover with plastic wrap, and let rise in a warm place for at least 1 1/2 hour, uncover, and beat once more, cover, and let rise again, about 30 minutes.
Step 3
When the dough has risen, punch down the dough to release any air bubbles, pull off the pieces of dough and shape them into balls or any shape you like, place the balls on a lightly floured surface, cover It with a clean kitchen towel and prepare for frying.
Step 4
Fill a small heavy saucepan about 5cm with neutral oil, heat on medium-high until the oil reach 180C and small bubbles forming gently, carefully place the Zalabia balls 4 to 5 at a time, Fry, turning occasionally, until puffed, crisp, and golden. Remove quickly to a large tray lined with paper towels to drain.
Step 5
Remove the Zalabia using a slotted spoon, transfer to a paper towel-lined baking sheet to drain. Dip fritters in the syrup for a few seconds to coat and soak up some syrup and serve it in serving bowl.

Other serving option:

Step 6
A- Put the Zalabia on a large serving plate, drizzle it with hot syrup and dust with powdered sugar on top.

B- Roll the fried Zalabia in lots of icing sugar and serve.
Step 8
C- Or you may consider all options by set it aside for individuals to chose any topping option as they please.
