How to prepare the Kibbeh
Step 2
In the food processor, beat the meat with ice well until it becomes creamy. Lamb or veal can be used as desired.
Step 3
We wash the bulgur and put it in a colander to get rid of the excess water, then put it with the whipped meat and onions in the meat processor, repeat the process 3 times, then put the spices, cinnamon, marjoram and salt and gradually add water a tablespoon each time and knead it well by hand until we get a dough that is easy to form coherent and non sticky.
Step 4
Take a spoonful of ghee at room temperature and spread it out on a tray with a diameter of approximately 25 cm.
Step 5
Wet our hand with a little water and take half of the dough and spread it on baking paper, spread it out to the size of a tray and then put it in the tray and spread the fried meat over it and press it by hand a little.
Step 6
We take the remainder of the Kibbeh dough and separate it in the same way as the first and spread it on top of the meat mixture, wet hand with water and flatten the surface well, then cut the surface halfway down as desired geomagnetic shape.
Step 7
Melt half a cup of ghee and pour it over the tray, then wrap it with foil paper and put it in a preheated oven at 375 degrees F. for 30 to 45 minutes. depending on the oven until the sides are slightly reddened and then broil it from the top.
Step 8
Take it out of the oven and discard the excess fat, then serve it warm with Tabouli, Fattoush or green salad.
Note:
Step 9
You can replace ghee with purified butter or vegetable oil, and you can decorate the surface of the tray with Pine nuts or almonds.
