Turkey with Ham in wine sauce

Ingredients
4 servings
Turkey fillets
4turkey fillets
4 slicescured ham
prosciutto, Jamon, etc
4 Tbspolive oil
2 tspgarlic
finely chopped
125mlwhite wine
125gbutter
1 tspcornflour
4eggs
cooked, peeled and sliced
For the potatoes
Instructions
Step 1
Cook the potatoes for 15 min in water with salt. Drain them then transfer them to a frying pan and fry them in the olive oil and parsley. reserve.
Step 2
Meanwhile, season the turkey fillets with salt and pepper
Step 3
In a frying pan with oil, saute the chopped garlic for a couple of minutes.
Step 4
Add the turkey fillets to the frying pan with slice of ham on the top, fry on both sides then keep them aside and warm.
Step 5
In the very same pan, pour the wine in and add the butter, salt and pepper, stir until the butter is dissolved. Dissolve the cornflour in a bit of water and add it to the sauce. Keep stiring until the sauce has thickened up.
Step 6
Lay the potatoes on a plate, top them up with the turkey fillets with the ham facing up. Lay the sliced eggs and pour the sauce over.
Step 7
Garnish with parsley and serve
