Instructions
Step 1
Mix chia seeds and water together in a small bowl and let it sit for 10 minutes until the mixture becomes gel.
Step 2
Grate zucchini and squeeze out as much excess moisture as possible. Transfer to a bowl. Mix in grated carrots and grated tofu, chia seed mixture, cornstarch, chickpea flour, salt & pepper.
Step 3
Heat oil in a frying pan over medium heat.
Step 4
Take about 3 tbsp of mixture and flatten it to make fritters shape, fry on both sides for about 3 minutes or until golden brown.
