WIC Approved Leftover Pizza Casserole

11 steps
Prep:25minCook:10min
Cost of recipe: $5.92. Cheese you add doesn’t have to be the ones I used, just make sure to use an equal amount of whichever you choose. You can also use store bought marinara if you would like. I just prefer a chunky marinara.

Instructions

Step 1
Cook noodles until al dente. Drain and set aside. Save 1/4 c of the pasta water for later.

Step 2
In a large uncovered sauté pan, bring to a simmer all of the sauce ingredients over medium heat.

Step 3
While your sauce is coming to a simmer, warm your pizza slices in the microwave for 15 seconds. You don’t want them hot, just slightly warm.
Step 4
Scrape all the toppings, cheese and sauce off the pizza. Set some toppings to the side to go on top of the casserole. Discard the crusts.
Step 5
Let your sauce continue to simmer for up to 25 minutes still uncovered. Stir every so often. You’re looking for the tomatoes to break down and the liquid to mostly evaporate.

Step 6
Once your sauce is ready, add in the scrapings from the pizza and turn the heat down to low. Mix until fully incorporated.
Step 7
Add in the noodles and pasta water. Mix well.
Step 8
Preheat oven to 350

Step 9
In a small pan (I used a loaf but an 8x8 would also work) add half of the pasta in and flatten slightly. Top with 1/2 of the shredded cheese.

Step 10
