Instructions

Step 1
Salt, pepper, and garlic powder the filets, vacuum seal. (Do not use raw garlic in sous vide, only garlic powder.)
Step 2
Place in sous vide bath at 131°F for 2 hours.
Step 3
Pat dry, coat with a thin layer of mayo (I promise you cannot taste it, but it makes the best sear), and then season to your liking. Be careful not to use too much salt because you've already used some salt.

Serving Suggestions

Step 4
Top with compound butter. Serve with caramelized onions, sauteed mushrooms, mashed potatoes, asparagus.
