Chicken
1 kiloboneless chicken thighs
2 cupsyoghurt
1lemon
squeezed
2 Tbspolive oil
4 clovesgarlic
1 tspshawarma spices
1 tspcumin
1 tspPaprika
1 tsponion powder
1 tspblack pepper
1 tspSalt

Instructions
Step 1
Begin with finely chopping the garlic and squeezing the lemon. In a mixing bowl add the yoghurt, garlic, lemon, olive oil and spices. Mix well then add the chicken. Give it a good mix until the chicken is well coated. Leave to marinade in the fridge for at least 2 hours.
Step 2
For the toum, add the garlic to a food processor with the salt and lemon juice. Blitz until smooth and then slowly add the oil until you have thick consistency. It helps if all over the ingredients are room temperature and you go slow and steady with the oil.
Step 3
Slice a potato in half and stick wooden skewers through them. Layer the chicken and then place in a 200c oven for 35-40 minutes.
Step 4
Peel and slice your potatoes into fries. Boil for 2 minutes then leave to steam dry. Heat the oil to 180c/350f and fry until golden brown and crispy.
