Vegetarian Green Chili Breakfast (or Dinner) Burritos
The below made me about 10 burritos.
Be careful not to overfill.

Ingredients
10 servings

10baby red potatoes

4eggs

2 tablespoonssour cream

13 ozGreen Chilies
Roasted, Bueno Fire Roasted
1 teaspoonMixed Up Salt
herb salt

1 teaspoonblack pepper

½ cupcolby jack shredded cheese
1 teaspoonMEXENE chili powder

1 teaspoongreen chili powder

2 tablespoonsimitation bacon bits

10flour tortillas

Instructions
Step 1
1. Chop up baby red potatoes in small bite size pieces.
Step 2
2. Spray non-stick skillet with PAM.
Step 3
3. Fry potatoes with salt, pepper, chili powders.
Step 4
4. Prepare eggs by whipping them in bowl with sour cream.
Step 5
5. Pour egg mixture in with potatoes that are lightly browned. Add bacon bits, green chilis.
Step 6
6. Cook egg mixture until eggs firm up. At this point, sprinkle cheese over top and incorporate.
Step 7
7. Remove from heat. Warm tortillas, add filling, & roll into burritos.
Step 8
8. Top with leftover chili, hot sauce, etc. You may freeze these wrapped in parchment paper and put into freezer bags for reheating in microwave later.
Step 9
9. Serve and Enjoy!!!
