1.5 lblean ground beef

1onion
small, chopped

1 packagetaco seasoning mix

extra virgin olive oil

6flour tortillas
8-inch

1 x 15 ozcan kidney beans
rinsed and drained

1tomato
large, chopped
1 x 8 ozpreshredded iceberg lettuce

1avocado
large, peeled and chopped

2 cupsshredded sharp Cheddar cheese

Instructions
Step 1
Cook first 3 ingredients in a large skillet over medium heat, stirring until beef crumbles and is no longer pink; drain and set aside.
Step 2
Pour oil to a depth of 1/4 inch in a heavy skillet.
Step 3
Fry tortillas, 1 at a time, in hot oil over high heat 20 seconds on each side or until crisp and golden brown.
Step 4
Drain on paper towels.
Step 5
Layer beef mixture, beans, tomato, and next 3 ingredients on warm tortillas.
Step 6
Serve with desired toppings.
