SE's Gluten & Dairy Free Pancakes or Waffles
Adapted to a healthier version from our family's original favorite pancake recipe that I found on Recipezaar in 2009! Now our favorite GF DF breakfast recipe! We love to add blueberries for the waffles, and my kids like to add mini chocolate chips to the pancakes.

Instructions
Step 1
In the bowl of the mixer, add eggs and honey and beat well.
Step 2
In a glass measuring cup, add lemon juice, then pour in almond milk to the 2 cup line. This will cause the almond milk to seperate, but that's ok. Allow to sit for a few minutes.
Step 3
Add baking soda, baking powder, and salt to the mixture, continuing to mix together. Add coconut oil and vanilla.
Step 4
Slowly pour in almond milk, while mixing.
Step 5
Slowly add in gluten free flour and almond meal. Fold in (optional) blueberries or other add-ins.
